Food microbiology is a fascinating and challenging science. It is also very demanding with a constantly changing sea of guidelines, regulations and equip­ ment. Public concerns over food safety issues can overemphasize certain risks and detract from the normal hygienic practice of food manufacturers. This new edition aims to update anyone concerned with the hygienic production of food on key issues of HACCP, food microbiology and the methods of microbe detection. I have taken a 'crystal ball' approach to certain topics. The use of rapid techniques such as lux gene technology and polymerase chain reaction (DNA probes) are progressing so rapidly in the research laboratory that when this book is in print the techniques may be more readily available. New methods for investigating viral gastroenteritis due to small round structured viruses (SRSV) have been developed past the 'research' stage and may become more standard in the next few years. Undoubtedly this will alter our understanding ofthe prevalence of viral food poisoning. I have also included issues such as new variant CJD (associated with BSE infected cattle) which at the time of writing has only caused the deaths of 20 people, but due to the uncertain incubation time could be a far more serious problem. In the UK there has been a much publicised outbreak of Escherichia coli 0157:H7 which has resulted in a government inquiry and the recommenda­ tion of the generic HACCP approach. Hence this approach to HACCP imple­ mentation has been included.

This book describes the philosophy of total appearance of food, the factors comprising it, and its application to the food industry. Beginning with an overview of food color and appearance attributes, the book describes the physics and chemistry of vision and color, sensory appearance and profile analysis, color measurement, color specification of food, and specification of other appearance properties. This new edition has been thoroughly updated, and includes new material on information transfer theory. The broad examination by the author attempts to bring into perspective the importance of food appearance to all sectors of the industry.

In the period of about five years since the first edition of this book appeared, many changes have occurred in the fruit juice and beverage markets. The growth of markets has continued, blunted to some extent, no doubt, by the recession that has featured prominently in the economies of the major consuming nations. But perhaps the most significant area that has affected juices in particular is the issue of authenticity. Commercial scandals of substantial proportions have been seen on both sides of the Atlantic because of fraudulent practice. Major strides have been made in the development of techniques to detect and measure adulterants in the major juices. A contri- bution to Chapter 1 describes one of the more important scientific techniques to have been developed as a routine test method to detect the addition of carbohydrates to juices. Another, and perhaps more welcome, development in non-carbonated beverages during the past few years is the rapid growth of sports drinks. Beverages based on glucose syrup have been popular for many years, and in some parts of the world isotonic products have long featured in the sports arena. A combination of benefits is now available from a wide range of preparations formulated and marketed as sports drinks and featuring widely in beverage markets world-wide. A new chapter reviews their formulation and performance characteristics. Another major trend in the area of fruit-containing non-carbonated bever- ages is the highly successful marketing of ready-to-drink products.

Database Concurrency Control: Methods, Performance and Analysis is a review of developments in concurrency control methods for centralized database systems, with a quick digression into distributed databases and multicomputers, the emphasis being on performance. The main goals of Database Concurrency Control: Methods, Performance and Analysis are to succinctly specify various concurrency control methods; to describe models for evaluating the relative performance of concurrency control methods; to point out problem areas in earlier performance analyses; to introduce queuing network models to evaluate the baseline performance of transaction processing systems; to provide insights into the relative performance of transaction processing systems; to illustrate the application of basic analytic methods to the performance analysis of various concurrency control methods; to review transaction models which are intended to relieve the effect of lock contention; to provide guidelines for improving the performance of transaction processing systems due to concurrency control; and to point out areas for further investigation. Signal Processing for Computer Vision is a unique and thorough treatment of the signal processing aspects of filters and operators for low-level computer vision. Computer vision has progressed considerably over recent years. From methods only applicable to simple images, it has developed to deal with increasingly complex scenes, volumes and time sequences. Random Generation of Trees is about a field on the crossroads between computer science, combinatorics and probability theory. Computer scientists need random generators for performance analysis, simulation, image synthesis, etc. In this context random generation of trees is of particular interest. The algorithms presented here are efficient and easy to code. Some aspects of Horton--Strahler numbers, programs written in C and pictures are presented in the appendices. The complexity analysis is done rigorously both in the worst and average cases. This book will attempt to give a first synthesis of recent works con- cerning reactive system design. The term "e;reactive system"e; has been introduced in order to at'oid the ambiguities often associated with by the term "e;real-time system,"e; which, although best known and more sugges- tive, has been given so many different meanings that it is almost in- evitably misunderstood. Industrial process control systems, transporta- tion control and supervision systems, signal-processing systems, are ex- amples of the systems we have in mind. Although these systems are more and more computerized, it is sur- prising to notice that the problem of time in computer science has been studied only recently by "e;pure"e; computer scientists. Until the early 1980s, time problems were regarded as the concern of performance evalu- ation, or of some (unjustly scorned) "e;industrial computer engineering,"e; or, at best, of operating systems. A second surprising fact, in contrast, is the growth of research con- cerning timed systems during the last decade. The handling of time has suddenly become a fundamental goal for most models of concurrency. In particular, Robin Alilner 's pioneering works about synchronous process algebras gave rise to a school of thought adopting the following abstract point of view: As soon as one admits that a system can instantaneously react to events, i. e.

Today, wireless infrared transmission has entered our homes, offices, industry and health care, with applications in the field of remote control, telemetry, and local communication. This book is about the underlying technology. As it is an outgrowth of my Ph.D. thesis, the emphasis is on fundamental aspects rather than industrial aspects, like the standardization effort by the IrDA [7]. I guess that this is not a drawback, as, eventually, the laws of physics apply to all of us! As the applied radiation is not necessarily in the infrared, throughout the book we usually prefer the term optical transmission. As most equipment is battery-powered, the emphasis is on power optimiza- tion of the optical transmission system. System parameters as well as environ- mental parameters that determine the eventual transmission quality are iden- tified, to facilitate well-reasoned system design. Many design rules, based on calculations, measurements and simulations are presented to help the designer push the performance close to the limits set by nature and the available tech- nology. The first chapters introduce the subject and the present the scope of the book. Then, the basic transmission link is introduced in chapter 3, and strate- gies to optimize its signal-to-noise ratio are discussed. Lighting flicker is identi- fied as a possible source of interference. Then, receiver noise and bandwidth are discussed in chapter 4, mainly based on the material presented in [66], [67], [69].

Cardiac Ischemia: From Injury to Protection has been divided into six parts. The first part describes the differences between hypoxia and ischemia, animal models, the effects of ischemia on myocardial function and metabolism, and the electrophysiological consequences of ischemia. The second part deals with the mechanisms of cardiomyocyte death in ischemia, structural aspects of irreversible ischemic injury, necrosis and apoptosis of cardiac cells, the role of calcium, and the concept of calcium antagonism. The third chapter is a brief description of reperfusion injury, its clinical relevance, and possible prevention. The fourth part summarizes changes in myocardial vasculature during ischemia and reperfusion. The fifth part is the survey of two main possibilities for increasing cardiac resistance to ischemia and hypoxia, i.e. long-lasting adaptation to chronic hypoxia and short-lasting preconditioning. The last part of the book deals with comparative and ontogenetic aspects of cardiac sensitivity to oxygen deprivation; this chapter also summarizes the ontogenetic differences and limitations in endogenous and exogenous protection of the ischemic/hypoxic heart.

Compact Low-Voltage and High-Speed CMOS, BiCMOS and Bipolar Operational Amplifiers discusses the design of integrated operational amplifiers that approach the limits of low supply voltage or very high bandwidth. The resulting realizations span the whole field of applications from micro-power CMOS VLSI amplifiers to 1-GHz bipolar amplifiers. The book presents efficient circuit topologies in order to combine high performance with simple solutions. In total twelve amplifier realizations are discussed. Two bipolar amplifiers are discussed, a 1-GHz operational amplifier and an amplifier with a high ratio between the maximum output current and the quiescent current. Five amplifiers have been designed in CMOS technology, extremely compact circuits that can operate on supply voltages down to one gate-source voltage and two saturation voltages which equals about 1.4 V and, ultimate-low-voltage amplifiers that can operate on supply voltages down to one gate-source voltage and one saturation voltage which amounts to about 1.2 V. In BiCMOS technology five amplifiers have been designed. The first two amplifiers are based on a compact topology. Two other amplifiers are designed to operate on low supply voltages down to 1.3 V. The final amplifier has a unity-gain frequency of 200 MHz and can operate down to 2.5 V. Compact Low-Voltage and High-Speed CMOS, BiCMOS and Bipolar Operational Amplifiers is intended for the professional analog designer. Also, it is suitable as a text book for advanced courses in amplifier design.

Multimedia is changing the design of database and information retrieval systems. The accumulation of audio, image, and video content is of little use in these systems if the content cannot be retrieved on demand, a critical requirement that has led to the development of new technologies for the analysis and indexing of media data. In turn, these technologies seek to derive information or features from a data type that can facilitate rapid retrieval, efficient compression, and logical presentation of the data. Significant work that has not been addressed, however, is the benefits of analyzing more than one data type simultaneously. Computed Synchronization for Multimedia Applications presents a new framework for the simultaneous analysis of multiple media data objects. The primary benefit of this analysis is computed synchronization, a temporal and spatial alignment of multiple media objects. Computed Synchronization for Multimedia Applications also presents several specific applications and a general structure for the solution of computed synchronization problems. The applications demonstrate the use of this structure. Two applications in particular are described in detail: the alignment of text to speech audio, and the alignment of simultaneous English language translations of ancient texts. Many additional applications are discussed as future uses of the technology. Computed Synchronization for Multimedia Applications is useful to researchers, students, and developers seeking to apply computed synchronization in many fields. It is also suitable as a reference for a graduate-level course in multimedia data retrieval.

Analog integrated circuits are very important as interfaces between the digital parts of integrated electronic systems and the outside world. A large portion of the effort involved in designing these circuits is spent in the layout phase. Whereas the physical design of digital circuits is automated to a large extent, the layout of analog circuits is still a manual, time-consuming and error-prone task. This is mainly due to the continuous nature of analog signals, which causes analog circuit performance to be very sensitive to layout parasitics. The parasitic elements associated with interconnect wires cause loading and coupling effects that degrade the frequency behaviour and the noise performance of analog circuits. Device mismatch and thermal effects put a fundamental limit on the achievable accuracy of circuits. For successful automation of analog layout, advanced place and route tools that can handle these critical parasitics are required. In the past, automatic analog layout tools tried to optimize the layout without quantifying the performance degradation introduced by layout parasitics. Therefore, it was not guaranteed that the resulting layout met the specifications and one or more layout iterations could be needed. In Analog Layout Generation for Performance and Manufacturability, the authors propose a performance driven layout strategy to overcome this problem. In this methodology, the layout tools are driven by performance constraints, such that the final layout, with parasitic effects, still satisfies the specifications of the circuit. The performance degradation associated with an intermediate layout solution is evaluated at runtime using predetermined sensitivities. In contrast with other performance driven layout methodologies, the tools proposed in this book operate directly on the performance constraints, without an intermediate parasitic constraint generation step. This approach makes a complete and sensible trade-off between the different layout alternatives possible at runtime and therefore eliminates the possible feedback route between constraint derivation, placement and layout extraction. Besides its influence on the performance, layout also has a profound impact on the yield and testability of an analog circuit. In Analog Layout Generation for Performance and Manufacturability, the authors outline a new criterion to quantify the detectability of a fault and combine this with a yield model to evaluate the testability of an integrated circuit layout. They then integrate this technique with their performance driven routing algorithm to produce layouts that have optimal manufacturability while still meeting their performance specifications. Analog Layout Generation for Performance and Manufacturability will be of interest to analog engineers, researchers and students.
