    An appropriate process technology for production of peanut butter from commonly grown peanut cultivars in Saurashtra region of Gujarat was developed. The sensory and textural measurement as well as the proximate analysis was carried out for the peanut butter prepared, from selected five peanut cultivars of Gujarat viz., GG2, GG7, GG20, GG11 and GG13, at the optimised conditions following the developed process technology. The peanut butter prepared using the kernels of GG20 cultivar exhibited better overall acceptability as well as better firmness and spreadability during the textural measurement. Considering all the parameters, GG20 cultivar could be recommended for the production of good quality peanut butter as per the developed process technology. The Spanish bunch type cultivars viz., GG2 and GG7 gave the lower ratio of oleic to linoleic acid content i.e. stability index, suggesting their non-suitability for the production of peanut butter.

    The present project was undertaken to assess the post harvest losses and value addition to banana through processing as followed in Gujarat. The effect of various ripening methods on losses were also determined. The study revealed that the overall post harvest losses in banana after harvesting till ripening was found to be 15.43%, which included losses at field level (0.77%), at trader''s level (5.86%) as well as ripening losses (8.80%). Only negligible losses were reported and observed during the processing of banana. The highest value of actual total loss (16.00%) was observed in case of smoking + room temperature method of ripening, while the lowest value of 4.66% was observed under the ethephon + air-cooled chamber method. Although, the ethephon + ice treatment method gave ripening loss to the tune of 7.43%, this method was most widely adopted in Gujarat considering its convenience and good appearance of bananas after ripening. It is recommended from the study that the improved ripening methods like ripening under ethephon + air cooled chamber method should be used during ripening to obtain the good quality banana with a lowest value of losses.

    Storage life Talaja Red onion can be increased in forced ventilated storage to catch higher prices. The storage disease in natural ventilation was higher due to sorption and desorption of moisture. The weight loss can be reduced from 23.74 in natural ventilated storage to 10.24 per cent in forced ventilated storage. Pungency and dry matter content are the important quality attributes in onions for processing which was higher in forced ventilated storage. The total sugar content was higher and the reducing sugar content was less in forced ventilated storage than natural ventilated storage. This suggested that the dry matter degradation was lower in forced ventilated storage. The storage disease at top was higher due to direct effect of atmosphere to the onion. Modifying the structure with less effect of atmosphere can solve this problem. Storage disease at bottom and middle was reduced in forced ventilated storage. The profit of onion storage can be increased in forced ventilated storage.
