Allium roseum, is a spontaneous species of the genus Allium and belonging to the family Alliaceae, and are among the species of the Tunisian flora. We proposed in this work to evaluate the antioxidant and antimicrobial activities of the volatile fractions and polar fractions of the different organs (leaves, flowers and bulbs) of Allium roseum var. grandiflorum Briq and to characterize the extracts with interesting activities in order to correlate the chemical composition to the antioxidant and antimicrobial potential and to valorize the bioactive substances offered by the Tunisian biodiversity. The evaluation of the antioxidant power shows that the ethyl acetate fraction of the leaves has an interesting strong antioxidant activity. The analysis by LC-MS showed the richness of this fraction in flavonol. A strong antimicrobial activity was attributed to the volatile fraction, which is even higher than that of Ampicillin. The presence of a major sulphur compound: dimethylthiosulfinate (48.28%), endowed with antibacterial and antifungal activity was demonstrated on the selected strains.
