    This project aims to design an operational control guide, as a result of the analysis of the identification of hazards and assessment of occupational risks in the quarry Agregados y Transportes La Roca S.A. in Mosquera, Cundinamarca. With the aim of preventing accidents and occupational illnesses on the production line. This is in response to the lack of information and documents in the mining and quarrying sector in Colombia. The methodology used was the evaluation of the matrix of legal requirements, with the regulatory parameters governing the mining and quarrying sector, filtered with a focus on occupational health and safety; from there, we proceed to perform the evaluation, assessment and analysis of the matrix, followed by the description of hazards and risk assessment, with the methodological tool proposed by the guide for identification of hazards and risk assessment of the GTC-45 of 2012. Finally, the different controls are determined based on the hierarchy given by ISO 45001 of 2018 to reduce the risks and hazards to which the quarry employees are exposed.

    This research provides the real testimonies of around 20 older women from the rural area of the Province of Chiloé, in the south of Chile. These testimonies have been interpreted from some sociological theories, by means of certain keys that transversalise the discourse of these women from Chiloé, in order to answer the questions: How are the gender differences that are established in rural Chiloé society manifested; where do the greatest gender inequalities occur in rural Chiloé society; what are the effects of these gender inequalities in the lives of rural women from Chiloé; and what are the effects of these gender inequalities in the lives of rural women from Chiloé? The answers to these questions have allowed us to visualise the gender differences that occur in this context, considering that this society maintains, in its social relations, the ancestral traditions, myths and beliefs of a very particular culture given its condition of "social and geographical isolation", which are manifested in practices and beliefs typical of the traditional patriarchal society.

    This work is the result of a Master's thesis in Human Rights and Democratisation at the Universidad Externado-Carlos III de Madrid. In this work, first of all, a legal analysis of the Indigenous Health System as of the Colombian Constitution of 1991 is carried out. Subsequently, I reflect on the legal, social and political context in which a new legal framework emerged in which the country's indigenous peoples have been able to realise their demands for territorial autonomy since the beginning of the 1990s. I then go on to review Decree 1953 of 2014, which attempts to fulfil the historical debt owed to the indigenous peoples and as a first step towards the configuration of the ETIs (Indigenous Territorial Entities). Finally, I make an assessment of the Decree, mentioning its strengths, weaknesses and the challenges that various ethnic communities have begun to generate from the aforementioned norm.

Its author, Feliciano Robles Blanco, retired, was born in El Torno, in the Jerte Valley, Cáceres, into a humble family linked to livestock farming. The competitive examinations and love took him to Seville, where he obtained a post as a secondary school teacher and married a woman from Seville, a marriage from which he had two children; curiously, his wife is the daughter of an Asturian woman born in Oviedo. Feliciano Robles was always attracted to the future "because historians are already there to study the past", he himself would say. In the mid-1960s, Spain began to open up to the novelties coming from abroad, and Feliciano was no stranger to them.

    In the elaboration of cider, an alcoholic fermentation (AF) occurs first, carried out by the yeast Saccharomyces cerevisiae, producing the transformation of the sugars in the apple juice into ethanol and carbon dioxide. In addition to AF, malolactic fermentation (MLF) can occur, carried out by lactic acid bacteria (LAB), which produce the transformation of malic acid into lactic acid. Among the LAB present in cider, Oenococcus oeni is the best adapted species and the one that normally performs MLF under the hostile conditions of cider, such as nutrient scarcity, low pH and high ethanol content. While the primary function of food and beverage fermentation is related to increased food safety and shelf life, it has also been associated with providing consumer health benefits. This thesis evaluates the modification of bioactive compounds with potential impact on consumer health during MLF by O. oeni in cider.
